
What's a taco de suadero?
Suadero is a Mexico City classic: a tender cut of beef from between the belly and the leg, slow-cooked until soft, then seared on the plancha for crispy edges.
Ours come the traditional way — on warm tortillas with onion, cilantro, guacamole, radish and grilled cebollitas. Pair them with al pastor, carnitas or lengua, add a squeeze of lime and the spicy salsa, and you've got the Roosevelt Avenue late-night ritual.
